1 kg ripe tomatoes, chopped
1 onion, diced
2 cloves garlic, minced
1 carrot, chopped
1.5 liters of vegetable or chicken broth
1 cup fresh basil leaves, chopped
2 tablespoons tomato paste
Olive oil, salt, and pepper to taste
Saute onions, garlic, and carrots in olive oil until softened.
Add tomatoes, tomato paste, and broth. Simmer until tomatoes break down.
Blend the soup until smooth, stir in chopped basil, and season to taste.
Serve hot with a garnish of fresh basil leaves.
